Certified organic extra virgin olive oil from Western Sicily, made with the Cerasuola and Biancolilla varieties. The olives are harvested by hand in October and cold pressed through a continuous process, with crushing within 24 hours of harvest. The oil has an intense green color and high density. The aroma is fruity with notes of green tomato and almond. The taste is full-bodied, with hints of bitterness and a persistent spicy aftertaste.

Ideal for use on raw dishes. Perfect for flavoring smoked salmon. Enhances oven-baked vegetables, rustic salads, oily fish, game meats and legume soups.
